ABSTRACT:

Food is one of the most important needs of a traveler. Some cuisines can be special attractions and add to the destination pull of a country while the absence of certain cuisine could be a deterrent to travel. Indian food just as food in other parts of world has been influenced by its geography and history, religion and customs economics and agriculture. As it is a vast country a sub-continent-food flavors and food habits vary from region to region. The Cuisine of Awadh has the most exotic recipes of the country in its pot. The Lucknow (former Awadh), in particular is the favorite haunt of the gastronomes as Uttar Pradesh inherited the secrets of the Nawabi Cuisines. Thus, amongst many other things Lucknow boasts of the rich and world-famous Awadhi cuisine. Therefore, it becomes imperative to undergo an in-depth study of Awadhi cuisine for documentation, interpretation so as to accordingly suggest viable steps for promotion of the same.
